About Misssi & Sustainability

Misssi Eis-Patisserie is an artisanal ice cream maker in Saalfelden in the Salzburg region. We craft artisanal ice cream, specializing in ready-to-serve ice cream pastries for the restaurant industry, the hospitality sector, and upscale food retailers. We use fresh organic milk from local farmers and select natural ingredients whose origins we know, and we consistently avoid artificial flavors, colors, additives, and ready-made pastes. We also make all our mix-ins ourselves in our own bakery.

All products are made in our own factory in Saalfelden, nestled in the heart of the Salzburg mountains. The ice cream production facility, bakery, and pastry shop are all under one roof.

For Misssi, sustainability begins with long-lasting partnerships, high-quality raw materials, and the shortest possible transport routes wherever practical. For us, quality and the responsible use of resources go hand in hand. In our manufacturing facility, we have implemented a sophisticated energy concept featuring a solar PV system, heat recovery, concrete core cooling and heating, heat pumps, and a closed-loop cooling water system.

For Misssi, regional origin is an important selection criterion—but not the only one. Some ingredients, such as vanilla, cocoa, or Amalfi lemons, grow only in certain regions of the world or achieve a level of quality there that would not be possible in our climate.

That is why we follow this principle: as local as possible, as international as necessary. It is not just distance that matters, but also how an ingredient is produced and who produces it. Long-term partnerships with responsible businesses are more important to us than minimizing the number of kilometers traveled.

Ingredients & Origin

Many ice cream manufacturers use ready-made mixes because they ensure consistent color, a standardized flavor, and ease of preparation. However, depending on the product, these mixes often contain flavorings, colorings, emulsifiers, or other additives.

Misssi deliberately takes a different approach. Instead of using ready-made pastes, we develop our own recipes using real ingredients. Fruit preserves, caramel, brownies, Florentines, brittle, ganaches, crumbles, and many other components are made in our own bakery. This allows us to select every ingredient ourselves and develop the flavor using high-quality raw materials and artisanal expertise—not pre-made mixes. As a result, we can tailor each recipe individually and continuously improve it.

This method is significantly more labor-intensive. However, in our view, it is the foundation for pastry-quality ice cream.

Quality doesn’t begin in the manufacturing process—it starts with the people and the conditions under which an ingredient is produced. That’s why we carefully select our suppliers—for most ingredients, we know the farm, we understand their values, and we know how they operate. That’s why we don’t buy from wherever is cheapest or closest, but rather from places where we know the people behind the product and trust them. Sometimes that takes more effort. But in the end, that’s exactly what you can taste.

Flavorings are often used in the industry to mask the lower quality of raw ingredients or to standardize the taste. However, when high-quality raw ingredients are used and carefully processed, they are not necessary. At Misssi Eis-Patisserie, we instead rely on artisanal skill, in-depth knowledge of our ingredients, and the time it takes to bring out their full flavor.

For Misssi Eis-Patisserie, “clean label” means that the flavor comes from real ingredients—not from flavorings or industrial shortcuts. That’s why we consistently avoid artificial and natural flavorings, colorings, additives, and ready-made pastes. So when you read the ingredient list, you’ll find exactly what you’d use at home—fresh organic milk from the farm, real vanilla from Uganda, Amalfi lemons, hazelnuts from Piedmont, and high-quality pumpkin seed oil from Styria. The exceptions are organic carob and organic guar gum. And for our frozen cocktails, we deliberately accept the use of E numbers in the ingredients, as we want to use the high-quality original ingredients of the cocktails that give our products their names.

Misssi uses only a few functional ingredients—and only where they offer real added value in achieving the desired quality.

For milk-based ice cream, we use organic locust bean gum and organic guar gum. Both are natural plant-based thickeners that, even in very small amounts, create a creamy texture and help the ice cream maintain its consistency even during extended service periods. This is particularly important for the restaurant and hotel industries.

For some fruit sorbets, we also use organic pectin. Pectin occurs naturally in many fruits and helps bind water and fruit components together. For fruits with a low natural pectin content, it prevents the sorbet from releasing water (“bleeding”) or separating as it melts.

Although locust bean gum (E410), guar gum (E412), and pectin (E440) have E numbers, they are not artificial additives but natural substances derived from plants. We use only organic-grade versions of these ingredients and only in the amounts necessary to achieve a high-quality texture and stable products.

Our philosophy is not to automatically reject every ingredient with an E number. We evaluate each individual ingredient based on its origin, its function, and whether it aligns with our vision of honest food. That’s why we prefer to use a few carefully selected natural ingredients rather than resorting to artificial alternatives or a multitude of other additives.

One example is our creamy lemon ice cream with Amalfi lemon confit. To make it, we use not just the juice, but the entire untreated Amalfi lemon—pulp, juice, and zest.

This creates significantly more depth and complexity than when using lemon juice alone. It is the essential oils in the zest, in particular, that provide the intense, natural aroma that sets this special ice cream apart.

Dairy & Agriculture

Our fresh organic milk comes from a farm in Saalfelden, just a few kilometers from our production facility. The cows have horns, are not fed concentrated feed, and are nourished exclusively on the farm’s own meadows, which are rich in biodiversity. Misssi Eis-Patisserie sources all other dairy products in organic quality from Salzburg Milch.

Misssi sources its fresh organic milk from a farm in Saalfelden, where the cows are allowed to keep their horns and are fed exclusively on grass and hay from the farm’s own pastures. The milk comes from cows with the A2A2 genotype and is milked just a few kilometers from our production facility.

Whether a cow has horns does not directly affect the taste of the milk. For us, however, horns symbolize a particularly natural and respectful approach to animal husbandry. We want to work with farms whose values align with our vision of honest food.

Milk contains various proteins. One of them is beta-casein. Cows can produce genetically different variants of this protein—primarily A1 or A2. Cows with the A2A2 genotype produce only the A2 variant of beta-casein.

The fresh organic milk for Misssi comes from a farm in Saalfelden whose cows have the A2A2 genotype. Some people find A2 milk easier to digest than conventional milk. However, the scientific evidence on this topic is not yet conclusive. For this reason, we do not make any health claims regarding it.

We didn’t choose this farm solely because of the A2A2 milk. Just as important to us are organic farming, raising horned cows, feed from the farm’s own pastures, high biodiversity, short transport distances, and a trusting partnership with a farmer whose values we share.

Ice Cream & Artisanal Craftsmanship

The amount of air in ice cream is called “overrun.” Industrial ice cream often contains significantly more air because this allows manufacturers to produce a larger volume using fewer ingredients. High-quality ice cream, on the other hand, usually has a lower overrun and thus a higher proportion of real ingredients. As a result, one liter of ice cream contains more real ingredients and less trapped air.

Misssi deliberately uses a low air content of about 20%. This makes the ice cream more compact, creamier, and more flavorful. At the same time, it retains its shape longer when portioned and served—an important advantage for the restaurant and hotel industries.

So, less air doesn’t mean the ice cream has to be heavy or hard. The key is the right recipe. It ensures that the ice cream remains pleasantly creamy despite the low overrun and develops its full flavor.

Yes. The vegan flavors from Misssi Eis-Patisserie are made with organic oat milk from Austria and are developed to the same high quality standards as our dairy ice cream flavors. We also offer a range of “no added sugar” flavors.

Natural ingredients are never exactly the same from one year to the next. Climate, hours of sunshine, precipitation, and harvest time all influence the flavor of vanilla, fruits, nuts, and cocoa.

That’s why high-quality, naturally produced ice cream may vary slightly from season to season. Just as with wine or coffee, we don’t see this as a drawback, but rather as a sign of authentic ingredients. Our job is to bring out these differences to their fullest potential through artisanal craftsmanship—not to mask them with artificial flavors.

Ice crystals do not form during production, but rather as a result of temperature fluctuations during storage or transport. If ice cream thaws partially and is then refrozen, small ice crystals combine to form larger crystals, which can be felt when eating it.

That is why a consistently unbroken cold chain is particularly important. Misssi develops its recipes to ensure they remain as stable as possible. Nevertheless, no recipe can prevent frequent thawing and refreezing from compromising quality.

Artisanal ice cream is usually produced in smaller batches and relies on high-quality ingredients, unique recipes, and careful preparation. Industrial ice cream, on the other hand, is designed for high production volumes, a long shelf life, and standardized processes.

Misssi combines artisanal craftsmanship with modern production standards. We deliberately avoid using artificial flavors and ready-made pastes; we make many of the ingredients ourselves and use minimal air incorporation so that the flavor of the ingredients takes center stage.

After mixing the ingredients, the ice cream mixture is allowed to rest for several hours before being frozen. This resting period ensures that the fat, egg whites, and plant-based stabilizers combine optimally and that the water is evenly incorporated.

The result is a smoother, creamier texture and a more harmonious flavor. The aging process is therefore a key component of high-quality artisanal ice cream production.

High-quality ice cream should be stored at a temperature of at least −18 °C at all times. It is not only the temperature itself that is crucial, but also that it remains as constant as possible.

Frequent thawing and refreezing degrades the texture, promotes the formation of ice crystals, and impairs the flavor. Therefore, ice cream should be returned to the freezer as quickly as possible, and unnecessary temperature fluctuations should be avoided.

Ice Cream and Pastry Shop

For us, pastry-quality ice cream means creating ice cream like a pastry chef—using homemade ingredients such as brownies, Florentines, ganaches, fruit preserves, and brittle. The result is complete ice cream desserts with interesting, multi-layered textures, rather than classic ice cream flavors.

This allows Misssi customers to offer their guests ice cream products just like those from their own 5-star or award-winning patisserie. With unique flavors, made from carefully selected ingredients, and crafted with the finest artisanal expertise. We don’t see ourselves as mere ice cream makers, but as producers of high-quality ice cream desserts. That’s why we develop our products much like a pastry chef and make all the components of our creations ourselves: from brownies, Florentines, crumbles, fruit preserves, nougat, and ganaches to caramel and nut brittle.

Ice cream pâtisserie combines classic pâtisserie with ice cream. This includes multi-layered desserts, ice cream slices, ice cream pralines, and artfully composed ice cream desserts featuring a variety of textures.

Many ready-made dessert ingredients contain flavorings, palm oil, preservatives, or other additives that we want to consciously avoid.

However, in our own bakery, we make items such as brownies, fruit preserves, Florentines, brittle, cookie dough, crumbles, sauces, ganaches, and Mozart rolls—this allows us to maintain control over quality, ingredients, and flavor, and to perfectly match each component to the respective ice cream.

First of all, it must be easy to work with at -18 degrees. The law stipulates this as the minimum storage temperature, and no restaurant owner has time to let the ice cream thaw. It must also reliably hold its shape even if service takes a little longer. We achieve this through a very low air content of about 20% and the addition of plant fibers. This adds extra dietary fiber to the ice cream, making it particularly creamy despite its lower fat content.

Many businesses want to offer their guests a dessert that tastes homemade but doesn’t tie up staff time. Misssi ice cream and pastry products feature high-quality ingredients, artisanal production, and exceptional presentation.

Yes. Misssi sees itself as a development partner for innovative product ideas or house specialties. However, this is only within the framework of our quality criteria and recipes developed by Misssi. We do not offer contract manufacturing.

Retail & Direct Sales

Yes. Misssi Ice Cream Patisserie supplies delicatessens, farm stands, and select retail partners with creative ice cream desserts in beautifully designed ice cream cups, elegant layered desserts (640 ml) in transparent packaging with aluminum lids, family-size packs (480 ml), or individual-size cups (140 ml).

Yes. At the Misssi location in Saalfelden, there is a factory outlet as well as two ice cream vending machines where a wide range of products is available around the clock.

Misssi reliably supplies the foodservice and retail sectors throughout Austria at least twice a week. We deliver pallets to other countries upon request.

For free delivery, a minimum of 15 boxes is required. Smaller quantities are subject to an additional fee.

The best-by date is 12 months.

Size doesn’t matter, but free shipping is available only for orders of 15 or more boxes.

Frucht Oswald - Maierhof, Eastern Styria

Frucht Oswald processes high-quality fruit in Maierhof, in the heart of Styrian fruit growing, with great care and many years of experience. The focus is on regional fruit from Styria – supplemented by selected farms in Poland, Ukraine and Romania, with which the Oswald family works personally and on a long-term basis.

What unites us is transparency along the entire value chain. Origin is traceable, quality is consistently checked, processing is carried out carefully and with respect for the raw material.

Brandl farmer

Why this supplier?

Martina and Christoph from Brandlbauern in Saalfelden are passionate about preserving the “Pinzgauer Strahlenziege”.
Although the robust and frugal animals have been native to Pinzgau for centuries,

they are now almost extinct and belong to the highly endangered domestic breeds.
In comparison, the milk has a very mild taste and is high in vitamins, minerals and trace elements.

Martina also uses it to make goat’s cheese balls and yogurt.
We really like Martina and Christoph’s initiative and use the milk for our goat’s cheese ice cream with caramel balsamic vinegar!

Mohnhof Gressl - Waldviertel

The Gressl family has been growing high-quality poppy seeds in the Waldviertel for many years – with great care and a lot of experience. The region is considered one of the most traditional poppy-growing areas in Europe and offers ideal conditions for aromatic, finely structured poppy varieties.

At Mohnhof Gressl, the entire process remains in one hand – from cultivation to harvesting and processing. Sustainable cultivation, regional added value and precision craftsmanship are the focus here.

For us, this poppy seed is the basis for varieties with a clear, nutty depth and natural aroma. An ingredient with origin and character.

Vanilla World

Why this supplier? 

VanilleWorld stands for quality and premium vanilla from Uganda. We came across this supplier through the non-profit organization Rwenzori e.V.. The aim of Rwenzori is to implement projects to promote rural development in Uganda. The long-standing and trusting cooperation between the association and the local population has created a good basis for exporting the fairly produced premium vanilla to Europe. In close cooperation with local partners, the non-profit association has already built a secondary school, is reforesting the Rwenzori Mountains and, since 2020, the association has been supporting the construction of an agricultural school.

Noccioleria - Azienda Agricola Rapalino, Piedmont

Hazelnuts grow in Piedmont and have been the benchmark for quality for generations. The IGP-certified nuts from the Rapalino family are characterized by their intense, clear aroma and particularly low bitter content – ideal conditions for an expressive hazelnut and nougat ice cream.

The Azienda Agricola Rapalino cultivates around 30 hectares under its own management. Since 2011, in addition to cultivation, further processing has also been carried out directly on the farm – from drying and precise roasting to the gentle production of hazelnut pulp. This means that the entire process remains under family responsibility.

We share a commitment to origin, craftsmanship and care. Quality is not created industrially here, but in a clear line from the tree to the finished product.

Hartlieb family - Heimschuh, Southern Styria

The Hartlieb family has been producing high-quality, cold-pressed pumpkin seed oil in Heimschuh in southern Styria for three generations. The pumpkins grow around their own factory and are carefully processed – from the seeds to the finished oil.

What unites us is the demand for origin and care. The raw materials come from the region and the processing is carried out with precision craftsmanship and a great deal of experience. The result is a deeply aromatic pumpkin seed oil with a clear structure and a characteristic, nutty note.

For us, Hartlieb is a partner that does not claim regionality, but lives it – and does not leave quality to chance.

Chocolate from Zotter - Riegersburg, Styria

Cocoa is an ethically sensitive raw material. Transparency and responsibility are not just marketing terms here, they are crucial.

Zotter processes its cocoa beans using its own bean-to-bar process and knows the supply chains right back to the source. Direct relationships with producers and clearly traceable origins are key criteria for us. In this area, we trust in the personal integrity of the entrepreneur.

The taste of the chocolate also impressed us. In our tests with different varieties, it showed a remarkable depth, clear aroma and a stable, intense color. For us, it’s not the name that counts – it’s quality that we can taste and take responsibility for.

Benvenuto

For over 40 years and now in its third generation, the Benvenuto family has been producing and processing nuts and fruit, especially hazelnuts from Piedmont. They are known among gourmets all over the world and are considered to be the best and tastiest of all. The queen of hazelnuts is the Tonda Gentile Trilobata variety.

Stefan Nothdurfter

Stefan Nothdurfter’s juicy, sweet Stanzer Zwetschken plums grow on a sunny plateau in Tyrol, 1000 meters above sea level. This very special variety loves the dry alpine climate. The south-facing slopes of the orchards, countless hours of sunshine, the large differences in temperature between day and night, high mineral content, as well as the hair dryer, characterize the particularly intense aroma of the Stanzer Zwetschke.
We are not only in love with the special taste, but above all with the color it gives our ice cream.

This plateau is the highest fruit-growing region in Europe and has even been awarded the title “Genuss Region Stanzer Zwetschke” by the Austrian Ministry of Life.

biohof Häusl

Bernadette and Martin Lohninger from the Häusl organic farm in the neighborhood supply us with yoghurt and buttermilk, which are delivered fresh to the manufactory every day. The open barn offers the cows outdoor exercise all year round, antibiotics are only used in emergencies and transportation routes are kept as short as possible.
A large photovoltaic system ensures the sustainable operation of the farm, with which they would soon like to be self-sufficient in terms of energy.

We appreciate the loving and organic husbandry of the cows, the short distance of the dairy products from the farm to us, as well as the Lohninger family themselves :)

Organic farm Lugmayr

Together with his wife Anna, Johann Lugmayr grows the best organic rhubarb on around 15 hectares. Although the intensely reddish vegetable is a grateful plant for organic cultivation, it is not easy to cultivate. Rhubarb is only harvested up to a fixed date, June 24, so that the canes can recover well after the harvest. The soil is also very stressed and therefore needs a new crop after a few years. Carrots, spinach, peas and runner beans thus grow on Johann Lugmayr’s fields in an organic circular economy.

The rhubarb stalks are harvested by hand from April to June. Rhubarb is at its tastiest when the year brings a cold winter and a warm spring.

Kittseer apricot

Connoisseurs also call it Austria’s “best apricot”.

Around 35,000 trees of the ”Hungarian Beast” thrive on around 110 hectares in the wonderful Pannonian climate between the Danube and Lake Neusiedl. Unmistakably juicy fruits that can be recognized from afar by their size and bright color alone.

The harvest usually lasts from early to mid-July. At this time of year, the 2,000-strong community of Kittsee near the Slovakian capital Bratislava is buzzing with activity. Not only because of the harvest, but also because the apricots are sold on two stalls in the middle of the village.

The ”Kittseer Marille” brand has been protected since 2004 to prevent apricots that do not originate from the Genussregion from being sold under the name ”Kittseer Marille”.

For us, the Gruberbauer organic farm is much more than just a supplier – it is both a source and a benchmark. Karin and Ernst Mosshammer have been running their farm organically for decades, with a consistent focus on animal welfare and biodiversity.

Their cows are A2A2, keep their horns, have year-round access and are fed exclusively on green fodder, hay and alfalfa from their own meadows, without concentrates or silage.

What makes this farm special is the combination of agriculture and nature: land is cultivated in such a way that animals and plants find their habitat, rare butterfly species are reintroduced and even amphibians benefit. This depth of biodiversity is exceptional and was recognized with an award as the “best organic farm in Pinzgau”.

This form of farming requires time, knowledge and perseverance. But it is worth it – the herd is robust, the use of medication is minimal and the meadows are rich in species.

And for us, this means an exceptionally clear, aromatic milk quality – the best basis for our high-quality product.

A form of agriculture that has become rare – and which we support out of conviction.
